TWD: Pecan Sticky Buns

I've been trying to watch my calories lately, and with 5 sticks of butter, these were going to be hard to fit into my daily limit. Luckily I was able to make some adjustments to make them work! The first thing I did, was roll them into 26 instead of 14 rolls. I'd much rather have one smaller bun than half a large one. Also, we reduced the butter and sugar topping, to make up for increasing the filling, because I thought it would need some more.

These rolls weren't hard, but it was difficult to fit all the rising and resting time into our busy schedules. By spreading them over two days, we were able to finagle it. I don't know if I'd make them again, just because they were so time-intensive. Maybe for Christmas or another special occasion, because the end result was very delicious! At least, I still have one log in the freezer that I'm looking forward to. I think next time I may actually do the full glaze, but I enjoyed being able to eat one guilt free :)

You can find the recipe here or here.

  1. Hi, your Pecan Sticky Buns looks great. Unfortunately I did not like the gooey part of it (please forgive me!)
I've "decimated" and replaced the butter and were still fine.
    Best greetings from Switzerland

  2. Good idea to keep one log in the freezer. I only made half the mix but wish I had done the whole thing and frozen half for the next time we need to use brioche - it was such hard work!

    Your buns look lovely!

    1. Thanks! I was considering only making half, and then I decided it wouldn't be that much work to double and save.

The one thing I enjoy about recipes like this is that you can finangle them around crazy schedules.

  10. They look perfect. I am trying to watch calories too and it's lame. Especially when I taste something like this. Good idea to save them for a special occasion. I was wishing I had made them for Mother's Day.

    1. That would have been smart! We started on Mother's Day, but weren't able to finish until the next day because it took so long haha.

  13. Hi Sara! I did not even consider making smaller portions. That is a great idea. It is all about getting to taste what I am eating, not necessarily to eat the biggest portion. If I were ever to make these again I will definitely do that. Great job!

    1. You're right about the timing, that would be hard. I think I'd probably make and freeze them ahead of time...

  17. These look heavenly! Good call on making the rolls smaller! I would feel much better eating a small one then half a big one, and then the other half cause well you obviously cant just have half :)
