This is an all right loaf of whole wheat bread. Maybe I should have tried harder to find malt powder. I substituted molasses instead. While this bread is not spectacular, it serves as a fine vehicle for all the jams we've been making this year. I think I'll still keep looking for the ideal loaf, at least for me.

I think the molasses is a perfect substitute and would not have changed this bread too much. Alas, I have still not found the perfect whole wheat bread - although King Arthur has a couple of recipes that are "almost" there for me.

The molasses didn't affect our bread, really, but I know what you mean about the perfect loaf. This one came pretty close for me.

ReplyDeleteThey look great! I will agree that this is rather a plain loaf and kinda unremarkable, but sometimes that's desirable. I hope you find your ideal loaf. Maybe one of the other recipes in the book will do it for you.

ReplyDeleteI agree that this is an okay loaf. There are better ones out there. It's a good teaching loaf, for people who are new to yeast bread baking.
