TWD: Cranberry Walnut Pumpkin Loaf



This turned out okay. I don't think it's the recipes fault, but it turns out I'm jut not the biggest fan of yeast and pumpkin flavor in the same thing. I think I'll stick to quickbread pumpkin recipes from here on out, but it was nice to at least give this a try. I did at least like the bread better toasted with butter. Butter does help most things. I wasn't able to find fresh or frozen cranberries, so I used dried instead. Who knows, maybe that would have been the difference between okay and great.

    I don't think this recipe was what many of us expected it to be - oh well, on to the next project, right? Bagels will be fun...

  3. I think the pumpkin was just for color! Fall looking bread. I loved the crunch from the nuts and I used half golden raisin and half dried fruit mix from King Arthur Flour that is one of my favorite foods in the world. The fresh cranberries did give it some zing. It was an interesting bread. Butter did help as you suggested. I think I'll make a loaf into french bread or bread pudding, yum.
    But...I'm really craving the quick pumpkin bread we thought we were making. I have company coming tomorrow. I'll make the pumpkin bread we all desired! Sorry for the ramble.

  6. Sara, I really enjoyed this bread, but if you were expecting sweet…they certainly were not! Sorry these were not a hit with you…they do look perfect, though!
